A waiter carrying oysters past a long lunch in Le Jardin

04 · The dining room

Le Jardin

Tables beneath old trees. Bread already on the table. Nowhere else to be.

Place 04 · Carmella France

Cream tablecloths, mismatched old silver, flowers cut from the property, olive oil, and wine in ice.

Breakfast becomes lunch. Lunch occasionally becomes dinner.

Candles are lit when the light goes. Nobody has ever been asked to leave the table.

Chef Étienne Moreau

Le Jardin · Carmella France

Arrived for one summer in 1998. Reception has stopped asking when he’s leaving.

His cooking follows the Mediterranean more closely than recipes.

Fish from the morning market. Vegetables from nearby farms. Olive oil from Provence.

Dinner depends, to some extent, on what arrived before lunch.
